Garden Zucchini Lasangna

Believe me I am not trying to change this blog in to a food blog, sadly I would never make it in that world.  With that said I just can’t help but share a few recipes from time to time, especially when they are tasty, easy and even more exciting use vegetables from our garden.  I gotta use them up somehow!

The other night we created one of my mother in laws recipes.  So delicious, low calorie, and easy that I am excited to share our culinary success with the world.  The main ingredient is the zucchini.  To start we picked a HUGE zuc from the garden and hoped for the best.

Next you slice them up like a banana so you have a bunch of round pieces.

How you choose to layer is totally up to your taste… but much like a lasanga (note that there are not noodles in this dish).  The meal is all about the layers.

This is what we did:

-In a skillet I browned hamburger meat, added garlic (from the garden) and onion, salt and pepper to taste, and some green peppers diced (from the garden).

-I then sliced up mozzarella cheese into thin pieces

1) first layer zucchini circles to fill the casserole dish

2) second layer meat and vegetable sauce

3) third layer mozzarella cheese

I repeated three times.  On the very top lay a layer of the zucchini, the meat sauce and cheese to seal it all in.

Bake on 375 for about 30-40 minutes.  Then enjoy this healthy meal made straight from the garden (Farmer’s Market or Grocery Store).

Even my mom who tends to eat on the unhealthy side loved this dish!
